Fried Eggs
Melt 1 tsp butter in a small skillet over medium heat. One at a time, break eggs into the skillet and cook slowly to desired doneness:
Sunny-side up: cook until the whites are set.
Over-easy: cook until the whites are set. Turn over and cook just long enough to form a white film over the yolks, about 30 seconds.
Over-well: cook until the whites are set. Turn eggs over and cook until completely set, about 1 minute.
Well-done or steam-fried: prepare sunny-side up eggs. Cover the skillet during the last minute of cooking, or spoon 1 tsp water over each eggs and cover the skillet. Cook until done as desired. Place eggs right side up on a plate.
Season with salt and pepper and serve immediately.
